As an aside, I won't believe what my eyes are showing me in the videos.

Yes, this was a very impressing illusions.
I wonder if its possible to do this in real life with some kind of prop?
That may be the next "hit" in the magic world.

Mark Setteducati's book (with Anne Benkovitz), The Magic Show includes at least one example of two of the illusions presented on the website (equal color values appear different when placed in different context...)

I found an incredible optical illusion that simply has to be seen to be believed. It requires considerable preparation (and a computer with printer) but it is well worth the effort.

The little dragon that you build is amazing!

I'm not sure if the directions about a mountain fold and valley fold are accurate. By mountain fold the seem to mean, fold down. Is this true?

A mountain fold looks like a peak (^) while a valley fold looks like a valley (V). This is standard origami terminology. You can find a wealth of origami basics with a simple web search using your favorite search engine.

merlou, believe what the directions are telling you about mountain and valley folds. They are counter-intuitive and you will seem to be building the dragon's head inside out. But that is correct, and the results are amazing.

I regret to announce that my cat ate my dragon this morning. Back to square one...
