Center Dealing - Finding the Center
I know the main book you would go to when learning the Center deal is Finding the Center by Antonio Zuccaro. It is a wonderful book, but, is there any other book(s) you think are worth delving into as regards to the Center deal?

Gene Maze and The Art of Bottom Dealing has a full description of Gene's Center Deal, which was completely invisible when he did it. He does use the Erdnase Bottom Deal Grip.

You could try the Magic of Fred Robinson for his method, or the large article David Ben wrote on Ross Bertram in Genii a few years back, which had a description of the Kennedy deal.
There's also Hollingworth's version which I think is taught in his book (as part of his gambling routine), and the Martin Nash work.
Andrew Wimhurst has work in (I think) Down Under Deals.
I think it depends on whether you want to use the 'outjog with a bevel' method, or the 'squeeze and push' variety...

Thank you Ian for those references, i will have a look. I prefer the squeeze and push variation... i think. I dont really like the idea of an outjog and with the bevel it looks awkward in the hands.

Thank you Bill, I will have to try and get my hands on a copy from somewhere. Both are not that easy to find.
